Best Bombay Mix to make at home

Bombay Mix with Onions, Chillies and Lemon

-275g regular Bombay mix
  (make sure it’s not an extra hot kind)
-1 medium red onion, finely chopped
-2 green chillies, finely chopped
-2 red chillies, finely chopped
-4 tablespoons fresh coriander, chopped
-Juice of 1 lemon
-3-4 tablespoons fresh pomegranate seeds

Simply pour the Bombay mix into a container with a lid and add the onion, chillies, coriander and lemon juice.
Place the lid back on the container and shake vigorously for several seconds. Open the lid and stir through the pomegranate seeds just before serving.

Cook’s tip make sure to mix every thing together just before serving; otherwise your Bombay mix will become soggy.
