Let’s be honest, does it get much better than cocktails in the sun, on a rooftop in St Paul’s with stunning panoramic views of the city? Yes, yes it does, you can have your cocktail decorated with a painting of St Paul’s at sunset – yes, it looks too good to drink and will end up on Instagram – thanks to the wonder of bar manager Eduard Balan at Madison, their cocktail menu has shaken and stirred up a mixology storm which demands to be tried by all.

Having made our way up to the lofty heights of the rooftop, we began with the St Paul’s sunset (because we’re a cliche) – a perfect blend of fermented pineapple “tepache”, black cherry and red wine liqueur which barely touched the sides. Continuing with the London themed cocktails, next up was the Madison mule. Having never realised the brilliance of rind and peel scraps, the Madison Mule’s use of citrus saccharum formed from the peels of lemons and lime on a base of Ciroc and Calamansi juice went down a treat. To finish things off we stuck to what we knew and that’s a good ol’ Margarita (or so that’s what we thought!). By mixing a generous serving of tequila and clarified lime juice made with Agar Agar, we had been taken with one final surprise and were not prepared to come back down to earth and back onto the streets of St Paul’s.
